MUFFINS WITH CEREALS + PROTEIN QUANARIAN AND BLUEBERRIES

Ingredients

1 cup Cereals + Quanarian Protein

1 cup whole wheat flour

1/2 cup brown sugar or sugar substitute

2 teaspoons baking powder

1/2 teaspoon salt

1 large egg, beaten

1 cup vegetable milk or drink

1/4 cup melted coconut oil

1 teaspoon vanilla extract

1 cup fresh or frozen blueberries

Instructions

Preheat the oven to 190°C and prepare a muffin tin with paper cups or by lightly greasing it.

Grind the cereals + Quanarian protein to a flour texture. In a large bowl, mix together the Quanarian cereal + protein flour, whole wheat flour, brown sugar, baking powder and salt.

In another bowl, combine the beaten egg, milk, melted coconut oil and vanilla extract.

Pour the liquid mixture over the dry ingredients and mix gently with a spatula until combined.

Add the blueberries to the mixture and spread into a muffin tin, filling to ¾ full as they will rise in the oven.

Bake for 20-25 minutes, or until a toothpick inserted into the centre of a muffin comes out clean.

Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
